Play, Make and Eat

They have been playing dress-up and lion play seems to be most popular right now.  Emmy even joins in by crawling around and roaring in her own way.

Dominoes are out again.

Clay hearts have been painted and hung in the window.

Black Bean Chowder has been made for lunch (and maybe dinner too).

In a large soup pot saute the pepper (I used one red sweet pepper), onion (1 large), and carrot ( 1 large) in 2 T. olive oil and saute for 10 minutes.  Add oregano, basil, 1/4 t. cayenne and 4 cloves garlic, minced.  Saute for another minute.  Add  about 1 cup soaked black beans or 1 can  (if they are dry ones - they should have soaked for about 24 hours) and 3 cups vegetable stock. Bring to a boil, turn down and simmer.  About 30 minutes before serving add 1 cup of organic corn and if desired about 1 c shredded cooked chicken.  Season with salt and pepper.

Warm wishes,
Tonya

  3. Sounds yummy! I am making Italian wedding soup today and 16 bean soup tomorrow with a ham hock. I love soups and will have to try this one too.
